As Summer comes to a close and we head into Fall, we tend to put away the summer foods and look forward to warm dishes and things with a little more kick. Less cool and refreshing salads and more chilies, soups and maybe an occasional meatloaf (plus, football season is here and people will need some great paleo snacks!) 🙂
Paleo Herb Crackers from Multiply Delicious!
One thing I really enjoy about our gym’s community is the love of sharing. Not just do people share their passion for fitness, but they share rides to and from the gym, lunch time to eat with others, and of course, recipes! Over the weekend we had a handful of people bring their favorite (or new!) dishes to the Anniversary party, and there were definitely a few recipes I’d love to share!
One that was a huge hit was Ben and Cari W.’s Paleo Herb Crackers from MultiplyDelicious.com! They were tasty and delivered just the right amount of crunch and Rosemary punch…
2 cups almond flour
1/2 teaspoon sea salt
2 tablespoon favrite herbs of choice (I used a blend of pizza seasoning and rosemary)
2 tablespoons water
1 egg white
1 tablespoon olive oil
1/4 teaspoon coconut oil
Preheat oven to 350.
Combine almond flour, salt, and spices in a medium mixing bowl. In a small bowl, whisk together the water, egg white, oilve oil, and coconut oil (melted). Pour wet ingredients into dry and stir until stiff dough forms and all dry ingredients are wet.
Place dough between 2 sheets of parchment paper and roll out to an even thickness of about 1/8 of an inch. Transfer parchment to a baking sheet pan and remove the top piece of parchment. Using a pizza cutter trim off uneven edges of dough, then cut the sheet of dough into cracker size pieces/squares.
Bake for 10 minutes. Turn off oven and let crackers sit inside oven for an additional 10 minutes, until golden.
Let cool, and enjoy!
